摘 要:
The basic concept of preliminary test for the high end porcine carcass quality is introduced. The methodology and the necessity of the preliminary test for the fresh carcass and the aged carcass have been reviewed. The characteristics of veterinary sanitation test, preliminary carcass test and meat quality have been compared. Furthermore, the importance of preliminary carcass test as regard to the developing pork market has been emphasized.
