城市居民猪肉质量需求的研究

摘  要:
研究居民饮食消费中的质量需求及其影响因素对居民的营养健康、食品加工、农业生产和产业结构调整具有重要的意义。考虑到不同肉类价格与质量之间的不可比性,选择了我国居民消费量最大的猪肉为例开展研究。结果表明,猪肉的质量需求随收入的提高而显著上升,上升幅度递减。同时,家庭特征因素、猪肉的加工程度和购买场所也会对猪肉的质量需求产生显著的影响。

摘  要:
Research on household food quality demand and determinants had important significance on the residents' nutrition and health,food processing,agricultural production and adjustment of industrial structure. Considering the incomparability between price and quality of meat,we chose pork,the largest meat consumption in China,as an example to carry out the research. The results indicated that pork quality demand rose with the increase of income significantly,but the increasing extent reduced. Meanwhile,the characteristics factors of family,pork processing degree and purchase venue also had significant influence on pork quality demand.
