镁对肥猪运输和屠宰应激及肉品质的影响

摘  要:
本试验研究镁的来源、水平和添加时间对肥猪运输和屠宰应激及肉品质的影响。试验以杜长哈杂交肥猪为研究对象,以玉米-豆粕-棉粕-小麦麸型日粮作基础日粮,试验Ⅰ和试验Ⅱ按试验要求随机分组,每个处理6个重复,每个重复5头猪。结果表明:天门冬氨酸镁组、硫酸镁组和氯化镁组的血清镁含量都显著高于对照组(P<0.05),天门冬氨酸镁组、硫酸镁组和氯化镁组的肾上腺素和去甲肾上腺素含量都低于对照组(P<0.05);血清肾上腺素和去甲肾上腺素含量随着天门冬氨酸镁添加量的提高而下降,但过1 000 mg/kg后开始趋向于稳定。大门冬氨酸镁组背最长肌糖元含量显著高于对照组(P<0.05),提高了5.43%~12.98%;相反乳酸含量显著降低(P<0.05);背最长肌pH较对照组显著升高(P<0.05);天门冬氨酸镁组背最长肌滴水损失降低45.25%,显著低于对照组(P<0.05),二头肌滴水损失降低2.15%,但差异不显著(P>0.05);天门冬氨酸镁组PSE肉比对照组降低100%。结论:本试验条件下,天门冬氨酸镁、硫酸镁和氯化镁,均可以缓解运输和屠宰给猪造成的应激,但是天门冬氨酸镁要强于硫酸镁和氯化镁。在肥猪屠宰前7 d,日粮中添加镁(天门冬氨酸镁)1 000 mg/kg,使血液镁浓度提高11.31%,不但能缓解运输和屠宰给猪造成的应激,而且能改善由于应激对肉质造成的影响。

摘  要:
The experiment was conducted to study the effects of dietary different forms,levels and additive time of magnesium on transportation,slaughter stress and meat quality of fattening pigs.Fattening pigs (Duroc × Landrace × Harbin) were fed corn-soybean meal-cottonseed meal-wheat bran as basal diet.Experiment Ⅰ or Experiment Ⅱ was randomly allocated to six replicates with five pigs in each replicate.The results showed that,serum magnesium contents in magnesium aspartate group,magnesium sulfate group,and magnesium chloride group were significantly higher than that in control group (P<0.05);compared with control group,the adrenaline and nordrenaline contents in magnesium aspartate group,magnesium sulfate group and magnesium chloride group were significantly lower (P<0.05).With magnesium aspartate levels increasing in the diet,serum adrenaline and nordrenaline contents were decreased,and the contents tended to become stable over 1 000 mg/kg.Compared with control group,the glycogen content of longissimus muscle in magnesium aspartate group was increased by 5.43%~12.98% (P<0.05),and also the pH was increased (P<0.05),but the lactic acid content was decreased (P<0.05).Drip loss of the longissimus muscle in magnesium aspartate group was decreased by 45.2% compared with that in control group (P<0.05),while that of biceps in magnesium aspartate group was decreased by 2.15% compared with that in control group (P>0.05).PSE in magnesium aspartate group was decreased by 100% compared with that in control group.It was concluded that magnesium aspartate,magnesium sulfate and magnesium chloride could relieve the stress of transportation and slaughter,and the effect of magnesium aspartate was better than that of the others.Supplementation of magnesium aspartate at dose of 1 000 mg/kg not only relieved the stress but also resulted in the optimal meat color and the serum Mg levels which was increased by 11.31% before slaughter seven days ago.
