摘  要:
【目的】调查新疆伊犁地区褐牛产业链中大肠菌群的污染分布,分析影响牛肉卫生质量的关键环节。【方法】用国家标准方法《生活饮用水标准检验方法—微生物指标(GB/T 5750.12-2006)》、《饲料中大肠菌群的测定(GB/T 18869-2002)》、《食品微生物学检验—大肠菌群计数(GB/T 47893-2008)》对新疆伊犁地区褐牛产业链中的水源、饲草料、屠宰加工环节进行大肠菌群最可能数(most probable number,MPN)检测。【结果】地下水和自来水中的大肠菌群MPN分布在低的范围里,食槽内的水基本上都分布在高的范围里。饲草料中青贮和青草中的大肠菌群MPN分布在较低范围。屠宰加工环节中,大部分样品的大肠菌群MPN在比较低的范围,但分割肉用具和胴体的大肠菌群MPN在比较高的范围。【结论】食槽饮水模式增加大肠菌群数量,秸秆和精料中大肠菌群的数量较高,分割肉用具中大肠菌群污染最高。

摘  要:
【Objective】To investigate the coliforms contamination distribution of the brown cattle industry chain in Xinjiang Yili area and analyze the impact of key factors in quality beef. 【Method】According to Standards examination methods for drinking water- Microbiological parameters( GB / T 5750. 12- 2006),Determination of Coliform Bacteria In Feeds( GB / T 18869- 2002),Microbiological examination of food hygiene- Enumeration of coliforms( GB / T 47893- 2008),the most probable number( MPN) method in the coliform bacteria of the brown cattle industry chain in water,forage,slaughter and processing segments in Xinjiang Yili area was checked. 【Result】The most probable number coliform bacteria of the groundwater and tap water were distributed in the low range,and the water inside the trough was in the high range. The most probable number coliform bacteria of the forage grass and silage was distributed in the low range. During slaughter and processing segments,the majority of the test samples was distributed in the low range,but the most probable number coliform bacteria of the cut meat tools and carcass of coliform was distributed in the high range.【Conclusion】The trough drinking water model has increased the most probable number of coliform group.The straw and concentrate have higher most probable number of coliform than the other feed. The cut meat tools have highest most probable number of coliform during all the slaughter and processing processes.
