常温贮藏下香水梨细胞壁组成物变化的研究

摘  要:
以宁夏海原香水梨为试材,研究常温(20±0.5℃)贮藏条件下香水梨的果实软化形成"软儿"梨过程中纤维素、半纤维素、果胶等细胞壁组成物的变化。结果表明:随着贮藏时间的增加,香水梨果实中的纤维素、半纤维素的含量均有所降低;酸溶性果胶(HP)的含量和碱溶性果胶(OHP)的含量均有一定程度的上升,水溶性果胶(WSP)在前期急剧上升,14 d后有下降的趋势;醇不溶性固形物(AIS)的含量明显降低。

摘  要:
Taking Ningxia Haiyuan Pgrus ussuriensismaxim as the test materials,researched Pgrus ussuriensismaxim fruit softening and cellulose,hemicellulose,pectin,cell wall composition changes the formation of "soft pear " in the process of at normal temperature(20±0.5 ℃)storage conditions. The results showed that the cellulose,hemicellulose content of pear fruit decreased with increasing storage time;acid soluble pectin(HP)content and alkali soluble pectin(OHP) content increased to some degree rise,water-soluble pectin(WSP) in early sharp rised,14 days later there was a downward trend;alcohol insoluble solid(AIS) content decreased significantly.
