山奈提取物对食用油脂的抗氧化作用

摘  要:
[目的]研究山奈(Kaempferia galangaL.)提取物对食用油脂的抗氧化作用。[方法]以猪油和菜籽油为底物,采用烘箱贮藏法测定油脂的POV值,并对其货架寿命进行预测,研究山奈提取物对食用油脂的抗氧化活性。[结果]山奈的石油醚提取物、乙酸乙酯提取物和正丁醇提取物对油脂均具有抗氧化活性,其油脂的货架寿命均得到明显延长。其中,乙酸乙酯提取物对油脂的抗氧化作用最强。[结论]该研究可为山奈的综合利用及开发新型天然抗氧化剂提供理论依据。

摘  要:
[Objective] The research aimed to study the antioxidation of Kaempferia galanga L.extracts on edible oils.[Method] The antioxidant activity of Kaempferia galanga L.extracts were studied by oven experiments using lard and rapessed oil as substracts.The POV value and shelf-life of edible oil were measured.[Result] The results indicated that Kaempferia galanga L.extracts by ligroin(PEK),Ethyl acetate(EAK)and n-butanol(BK)had antioxidant activity on edible oil.And its shelf-life were obviously extended.Thereinto,the effects of antioxidation of EAK was the strongest.[Conclusion] The study can provide theoretical basis for comprehensive utilization of Kaempferia galanga L.and development of new type of nature antioxidant.
