不同月龄‘兰州大尾羊’肉营养成分分析

摘  要:
测定了不同月龄‘兰州大尾羊’背最长肌的水分、灰分、蛋白质、粗脂肪、氨基酸及肉样中Fe、Mn、Zn、Cu、Mg和Ca的含量.结果表明:‘兰州大尾羊’肉中水分含量随着月龄的增加而降低,脂肪含量随着月龄的增加先升高后降低,其中1月龄‘兰州大尾羊’肉的水分和灰分含量最丰富,7月龄脂肪含量最高;‘兰州大尾羊’肉中氨基酸含量丰富且种类齐全,11月龄时成人必需氨基酸和婴儿必需氨基酸含量最丰富,9月龄时氨基酸总量最高;1月龄和3月龄‘兰州大尾羊’肉中的矿物质含量最丰富.

摘  要:
Nutrient composition in longissimus dorsi of 'Lanzhou fat-tailed sheep' in different months were measured as moisture,ash,protein,crude fat,amino acids and minerals.The results showed that moisture content decreased while the fat content increased firstly and then reduced as the age increasing.'Lanzhou fat-tailed sheep' had the maximum moisture and ash content in first month,and had the maximum fat content in the seventh month.The sheep had comprehensive amino acids.The content of adult essential amino acid and baby essential amino acid reached the highest in the eleventh month,while total amino acid content was the highest in the ninth month.The sheep in first and third month had the richest minerals.It was suggested that 'Lanzhou fat-tailed sheep' was rich in nutrition and with good flavor,could be popularized.
