放牧对不同性别雪山草鸡肌肉营养品质及肌苷酸含量的影响

摘  要:
采用两阶段饲养模式,即第一阶段采用高密度集约化养殖,第二阶段放牧期2个月,对照组继续高密度集约化饲养,研究了两阶段饲养模式下雪山草鸡肌肉营养品质及肌苷酸含量的差异。结果表明,放牧组雪山草鸡胸、腿肌粗蛋白质含量均高于对照组,且胸肌蛋白质在放养1个月时差异显著(P<0.05),腿肌蛋白质在放养1个月时差异极显著(P<0.01);放牧可使胸、腿肌中粗脂肪含量降低,且腿肌差异显著(P<0.05),放牧2个月后,母鸡粗脂肪含量显著高于公鸡(P<0.01);放牧1个月的雪山草鸡胸、腿肌中肌苷酸含量均显著提高,较对照组分别提高了13.19%(P<0.05)、8.5%(P>0.05),母鸡胸肌中肌苷酸含量较公鸡有提高的趋势(P>0.05),放牧2个月的雪山草鸡腿肌肌苷酸含量显著提高(P<0.05)。由此可见,放牧可改善雪山草鸡肌肉营养品质,提高鸡肉中肌苷酸含量,且对母鸡的影响更加显著。

摘  要:
An experiment was conducted to investigate the effect of free grazing on nutritional quality and inosine monophosphate(IMP) content of breast and thigh meat in male and female Xueshan chicken.The chickens were fed by a two-stage method,i.e.,high density intensive culture at the first stage and free grazing at the second stage.In the control group,the chickens were fed continuously with high density intensive culture.The trial period lasted two months.At the end of the trial,breast and thigh meat were collected to investigate the differences in nutritional quality and IMP content.The results showed that the crude protein content of breast and thigh meat in grazing group was higher than that of the control.The difference of the breast protein content was significant for one-month-grazing chicken(P<0.05),and the thigh protein content was extremely significant for one-month-grazing chicken(P<0.01).The crude fat content in breast and thigh meat was decreased,and the difference of thigh meat was significant(P<0.05).The crude fat content of hens was significantly higher than that of the cock grazed for two months(P<0.01).The inosine monophosphate(IMP) contents in breast and thigh meat of one-month-grazing Xueshan chicken increased by 13.19%(P<0.05) and 8.50% compared with the control,respectively.The IMP content of hen breast muscle was higher than that of cock,but the difference was not significant(P>0.05).The IMP content in thigh meat was significantly increased by two-month grazing(P<0.05).It was concluded that grazing improved the nutritional meat quality and increased effectively the IMP content of Xueshan chicken meat,and these effects were more significant on hens.
