摘  要:
食品安全关乎国计民生,随着食品的掺假方式越来越多,水产品真伪鉴别也愈发引起关注。本文主要介绍目前水产品的鉴定方法,以及用于水产品鉴定的各种目的基因的选择。回顾DNA条形码技术在国内外水产品掺假鉴定中的重要应用,使其有望实践中得到推广应用。

摘  要:
Food safety is of vital importance to the national economy and people's livelihood. With more and more food adulterations,the identification of adulterated aquaculture products has aroused much attention. The present identification methods for aquaculture products were introduced in the paper,with selection of target genes used for aquaculture product identification in particular. The applications of DNA barcode technology both at home and abroad were reviewed,hoping the technology to be extended in practice.
