不同季节毛竹笋营养成分比较分析

摘  要:
2011年11、12月和2012年1、2、3、4月采集毛竹冬笋、春笋,对其水分、总糖、氮、磷、钾、粗蛋白、17种氨基酸等含量进行测试分析。结果表明:毛竹笋的水分含量为88.9~92.8 g/100g,总糖含量为1.3~2.4 g/100g,氮含量为0.34~0.52 g/100g,钾含量为0.30~0.58 g/100g,磷含量为0.041~0.090 g/100g,粗蛋白含量为2.17~3.98g/100g,氨基酸总量变动范围是2.15~3.24 g/100g;毛竹笋中氮、磷、钾、粗蛋白、氨基酸总量的各个月变化基本一致,从11月到次年3月的变化差异不大,但4月则明显下降;毛竹笋水分含量的变化则随着气温升高而增加的趋势;毛竹笋总糖的含量各个月变化不显著;在毛竹笋未出土和已出土的对比试验中,其营养成分含量没有发现显著变化;在氨基酸检测中,除胱氨酸未检出及色氨酸不能检出外,均含有其它16种基本氨基酸,其中天门冬氨酸、脯氨酸、丝氨酸含量的变化规律相似,11月、12月、1月、2月、3月的含量变化不大,而4月急剧下降,酪氨酸含量的变化正好相反,酪氨酸是唯一在4月含量急剧上升的,除了上述4种氨基酸以外,其它已检出的12种氨基酸含量的变化不明显。

摘  要:
Bamboo(Phyllostachys heterocycla cv.pubescens)shoots were harvested in each subsequent month between November 2011 and April 2012 from bamboo stands in Dapeng village of Jiangshan city,Zhejiang province.The fresh bamboo shoots were tested for nutrient contents including moisture content,total sugar,nitrogen,phosphorus,potassium,crude protein and 16 kinds of basic amino acids.The results showed that the moisture content of the bamboo shoots ranged 88.9-92.8g/100g,total sugar 1.3-2.4g/100g,nitrogen 0.34-0.52g/100g,potassium 0.30-0.58g/100g,phosphorus 0.041-0.090g/100g.The crude protein content ranged 2.17-3.98g/100g while total amino acid changed in the range of 2.15-3.24g/100g.Contents of nitrogen,phosphorus,potassium,crude protein and total amino acid in bamboo had no change in each month from November to March of the following year,followed by a steep decline in April.Changes in moisture content of bamboo shoots showed an increasing trend with the rise of temperature.Changes in total sugar content were insignificant from month to month.A comparative analysis of earthed versus unearthed bamboo shoots on the same sort of nutrients found no significant difference.Except for cystine which was not found and tryptophan which could not be detected,the other 16 basic amino acids were detected in the bamboo shoots.Among the 16 amino acids,aspartic acid,proline and serine changed slightly each month in November,December,January,February and March of the following year,followed by a sharp decline in April,while the change trend in the content of tyrosine was the opposite.Tyrosine content is the only one amongst 17 amino acids that arose sharply in April.The rest12 of the 17 detected amino acids' content remained stable throughout the testing period.
