摘 要:
为研究精制茶厂不同工序的茶尘化学特性及其差异性,对取自祁门县金东茶厂红茶精制加工中抖筛、分筛、撩筛、紧门与风选5道工序外加1个空白样共6个茶尘样品进行测定与分析,结果表明:抖筛茶尘样中可溶性糖含量最高,为2.60%,氨基酸最低,为3.10%;分筛茶尘样中茶多酚、咖啡碱和水浸出物含量最高,分别为10.30%、3.76%和30.11%;风选粉尘样中茶多酚、可溶性糖和水浸出物最低,分别为6.35%、1.31%和21.54%;咖啡碱含量最低出现在车间场地茶尘样,为2.38%;分筛茶尘样的茶红素和茶黄素含量最高,分别为4.05%、0.31%,风选茶尘样茶红素含量最低,为0.13%,车间场地粉尘样茶黄素含量最低,为0.11%。上述结果说明,不同工序茶尘的化学特性存在较大差异。各工序茶尘化学特性差异与设备的机械性能、工艺参数及其空间布置直接相关。

In or der to study the chemical features and differences of tea dust from different processes in tea refining factory, this paper measured and analyzed six tea dust samples selected from Jindong Black Tea Refining Factory in Qimen. Six samples include those from five processes like shaking sieve, screening, teasing sieve, closing door, winnowing selection procedures, as well as one workshop space sample. Results showed that shaking sieve tea dust samples contained the highest soluble sugar content(2.60%) and lowest amino acid content(3.10%); the tea screening dust samples had the highest content of tea polyphenols, caffeine and water extracts(10.30%,3.76% and30.11% respectively); the sample from winnowing selection procedure had the lowest level of tea polyphenols, soluble sugar and water extracts(6.35%,1.31% and 21.54% respectively); the workshop space had the lowest level of caffeine of 2.38%; the dust sample from screening procedure had the highest level of thearubigins and theaflavins contents(4.05% and 0.31% respectively); the lowest content of thearubigins content(0.13%) was found in winnowing selection procedure, while the lowest level of theaflavins content(0.11%) was found in workshop space dust sample. The above mentioned results proved that there were great differences in chemical features of tea dust in various procedures, and these differences were directly linked to mechanic capacity, technological parameters and special arrangement.
