Pigment Extraction from Fruiting-Body of Cortinarius rufo-olivaceus and Its Stability

摘 要:
The extraction condition and the stability of natural pigment in fruiting-body of Cortinarius rufo-olivaceus were tested by using single factor and orthogonal experiment.The results showed that the pigment was extracted effectively with 80% of alcohol at 60℃ for 2 h.Among these factors,concentration of alcohol had the greatest effect on extraction of pigment,then duration and temperature of extraction.Pigment was instability to sunlight and ultraviolet light.Pigment was amaranth in acid condition and purple in alkalescence condition.The pigment was instability to Fe3+.It was instability to oxidant,stability to reducer.Pigment was relative stability to food additive and antiseptic.And the temperature had little effect to pigment at low 100℃.
