摘 要：
The electronic tongue is a new analytical method for tasting liquids.The human taste sense and the fundamental recognition principle of the electronic tongue were analyzed.Furthermore,several kinds of taste sensor based on different methods and their features were studied.In addition ,its application in food industry was presented.Finally,the prospect of electronic tongue technique was discussed.
