四层密集烤房下变频调速对烤后上部烟叶香气质量的影响

摘  要:
【目的】为了更好地彰显四层密集烤房烤后烟叶的香气品质和优化其烘烤工艺.【方法】研究了四层密集烤房下不同风机频率对烤后上部烟叶不同分子量致香物质含量和感官评吸质量的影响,同时对三层密集烤房和四层密集烤房烤后烟叶的致香物质和感官评吸质量进行对比分析.【结果】各变频处理的小分子量和中等分子量致香物质含量在降低风机频率后都有所增加,而大分子致香物质含量只有在定色前期(42~47℃)增加风机频率后才有所增加;与常规四层密集烤房(对照)相比,T1(变黄前期、中期、后期,定色前期、中期、后期,干筋前期、后期的风机频率依次为35、40、45、55、35、30、30、30Hz)和T3(变黄前期、中期、后期,定色前期、中期、后期,干筋前期、后期的风机频率依次为35、35、40、55、35、25、25、25Hz)处理的大分子致香物质含量分别显著增加了4.25%、3.35%,小分子致香物质含量极显著增加了7.04%、7.61%,致香物质总量显著增加了5.06%、3.83%,而T1中等分子量致香物质的含量较对照显著增加15.07%.【结论】在密集烘烤过程中必须根据烤房规格和装烟量选择合适风机频率,在四层密集烤房下以T1和T3处理烤后烟叶的香气质量表现较好.

摘  要:
【Objective】To improve aroma quality of flue-cured tobacco leaves by four-layer-bulking-curing barn and optimize its bulking technology.【Method】The effects of different fan frequency on contents of aroma substance with different molecular weight and smoking quality of upper flue-cured tobacco leaves were studied,and aroma substance and smoking quality of upper flue-cured tobacco leaves was compared between three-layer-bulking-curing barn and four-layer-bulking-curing barn.【Result】Aroma substance with small and middle molecular weight in different treatments increased after decreasing fan frequency,while the content of aroma substance with large molecular weight increased only at early stage of leaf dr-ying(42~47℃)after increasing fan frequency.Compared with CK(conventional fan frequency of four-layer bulking-curing barn),the content of aroma substance with large molecular weight significantly increased by 4.25% and 3.35%,aroma substance with small molecular weight extremely significantly increased by7.04% and 7.61%,and total aroma substance obviously increased by 5.06% and 3.83%in T1(early,middle,later stage of leaf-yellowing,early,middle,later stage of leaf-drying,early and later stage of stem-drying with fan frequency of 35,40,45,55,35,30,30,30 Hz)and T3(early,middle,later stage of leaf-yellowing,early,middle,later stage of leaf-drying,early and later stage of stem-drying with fan frequency of 35,35,40,55,35,25,25,25 Hz).While the content of aroma substance with middle molecular weight significantly increased by 15.07%in treatment T1 than that of CK.【Conclusion】The suitable fan frequency was fixed by barn specification and stacking tobacco leaves during the process of bulk curing.The aroma quality of upper tobacco leaves in T1 and T3treatments was better in four-layer-bulking-curing barn.
