性别对关岭牛产肉性能的影响

摘  要：
为了研究性别对关岭牛产肉性能的影响,选择生长发育正常、健康无病、8~10月龄、体重135±13.8 kg的关岭牛公牛、阉牛、母牛各8头,按性别分为试验Ⅰ组(公牛)、试验Ⅱ组(阉牛)、试验Ⅲ组(母牛),3组试验牛的初始体重差异不显著(P>0.05),饲养试验结束后,每组选3头牛屠宰测定。试验结果:在同一饲养管理条件下,试验Ⅰ组的体尺指标、宰前活重、屠宰率、净肉率、眼肌面积、高档肉块重最高,试验Ⅱ组次之,试验Ⅲ组最低;试验Ⅱ组的肉质指标最优,试验Ⅲ组次之,试验Ⅰ组最差。结果表明:后备牛阉割后进行育肥,可显著提高牛肉品质,同时可获得较高的增重速度。

摘  要：
In order to study the effect of sex on the meat performance of Guanling cattle,select the normal growth and development,healthy disease- free,8 to 10 months old,weighing 135 ± 13. 8 kg of Guanling cattle bulls,steers,cows each 8 head,divided by gender test group Ⅰ( bull),groupⅡ( steers),group Ⅲ( cow),the initial set of experiments 3 weight difference was not significant cattle( P > 0. 05),after the feeding trial,each group selected three cows slaughtered determination. The results show that,under the same feeding and management conditions,body measurements,live weight before slaughter,slaughter rate,meat percentage,eye muscle area,high- grade meat weight of experiment groupⅠis highest,test groupⅡ followed,test group Ⅲ the lowest; Optimal meat quality index of test groupⅡ is the best,test groupⅢ followed,test group Ⅰ the lowest. This shows,reserve cattle after castration fattening,can significantly improve the quality of beef,at the same time,a higher weight gain speed can be obtained.
