光叶紫花苕草粉对杂交肉牛肉质的影响

摘  要:
为探明光叶紫花苕草粉饲喂杂交肉牛对其肉质、屠宰性能、日增重等性状的影响,选择11~14月龄的杂交肉公牛27头,按品种配对分为3组,用添加光叶紫花苕草粉(含量分别为0、20%和40%)的精料补充料进行90d饲养试验。结果表明:试验组的平均日增重均有提高,增重1kg消耗的精料和饲料干物质减少,育肥效果优于对照,且以处理2效果为佳;屠宰率、净肉率、胴体产肉率均为处理2>对照>处理1;试验组的CP含量略高于对照(p>0.05),磷、镁的含量显著高于对照(p<0.05),铁、锌、钾、钙的含量显著低于对照(p<0.05),维生素A、维生素E的含量高于对照;17种已测氨基酸中,除蛋氨酸、异亮氨酸、γ-氨基丁酸和色氨酸外,其余的均显著高于对照(p>0.05);蛋白质的评分值显著高于对照(p<0.05),肉样均未检出铅、砷等重金属元素与黄曲霉素;试验组牛肉中亚硝酸盐的含量显著低于对照(p<0.01),鲜肉样中的BHC、DDT等均低于NY5044-2001标准中的规定值。结论:光叶紫花苕对杂交肉牛的屠宰性能与牛肉肉质具有良好的改善效果,以占精料的40%为佳。

摘  要:
To investigate the effects of V.villosa meal on meat quality,slaughter performance and average daily gain(ADG) of hybrid bulls,twenty seven 11~14 months old F1 hybrid bulls were assigned into three groups and fed with the concentrate feed in proportion as 0,20%,40% of V.villosa respectively for 90 days feeding experiment.The results showed that the ADG of the test groups were increasing,while the consumption of the concentrate feed and dry matter of feedstuff decreased for body weight gain.The fattening effect of test groups was better than that in CK,and the Treatment 2 was best.The results of slaughter rate,net meat rate and carcase beef production were Treatment 2>CK>Treatment 1.CP content in the test groups was slightly higher than that in CK(p>0.05).The contents of Phosphorus and Magnesium in the test groups were significantly higher than those in CK(p<0.05).However,the contents of Iron,Zinc,Potassium and Calcium in the test groups were significantly lower than those in CK(p<0.05),while the contents of Vitamin A and Vitamin E in the test groups were higher(p<0.05).The contents of amino acid in the test groups were slightly higher than those in CK(p>0.05) except Met,Ile,γ-aminobutyric acid and Trp in 17 kinds amino acid which had been detected.Protein score of the test groups was significantly higher(p<0.05).Heavy metals(Plumbum,Arsenic) and aspergillums flavus were not detected in the meat samples.The content of nitrite in CK was significantly lower than that in the test group(p<0.01).BHC,DDT of the fresh meat sample were lower than those in Non-pollution Food-Beef Standard(NY 5044-2001)(BHC mg/kg≤0.10,DDT mg/kg≤0.10).The results indicated that V.villosa had obvious improvement effect on the meat quality of hybrid beef cattle,and the proportion in the concentrate feed was 40%.
