新疆双峰驼驼乳化学成分和理化指标分析

摘  要:
生驼乳是驼乳制品的主要原料,其理化指标直接影响产品开发和质量安全,对50峰新疆双峰驼驼乳的基本化学成分和理化指标进行分析测定。结果表明:新疆驼乳含蛋白质3.85%,脂肪5.80%,乳糖4.71%,灰分0.91%;驼乳的相对密度为1.033,酸度21.2oT,pH6.55,冰点-0.576℃,电导率5.04 mS/cm。新疆驼乳的化学成分及理化指标和内蒙古阿拉善双峰驼驼乳基本一致。建议政府主管部门深入开展新疆驼乳化学组成、功能性成分及其变化规律以及加工特性等基础研究,制定生驼乳及驼乳制品地方标准,加强产品质量检验和市场监管,促进新疆驼乳产业健康稳定发展。

摘  要:
The chemical components and physicochemical indexes of Xinjiang Bactrian Camel milk were investigated. The results shown that the percent of protein, fat, lactose and ash in the camel milk was 3.85%.5.80%,4.71% and 0.91% respectively;the camel milk's relative density,acidity, pH, freezing point and electric conductivity was 1.033,21.2 °T,6.55,-0.576 ℃ and 5.04 mS/cm, respectively. The chemical components and physicochemical indexes of Xinjiang Bactrian Camel milk are similar to that of Alxa Bactrian Camel milk.
