光裸星虫4个野生群体的营养成分分析与品质评价

摘  要:
测定广东湛江、广西北海、福建漳州等地4个主产区的光裸星虫(Sipunculus nudus)的主要营养成分,分析光裸星虫群体间营养差异。结果表明,光裸星虫体壁的水分的平均质量分数为(79.39±1.81)%,体壁干品中粗蛋白、粗脂肪和灰分的平均质量分数分别为、(80.54±3.11)%、(1.45±0.27)%和(9.75±2.14)%。体壁干品中共检测到16种氨基酸,氨基酸总量(TAA)、必需氨基酸(EAA)、呈味氨基酸(DAA)的平均质量分数分别为(63.91±1.78)%、(21.76±0.63)%、(32.23±0.64)%;含量最高的5种氨基酸中,4种为呈味氨基酸,其中谷氨酸质量分数9.51±0.26%为最高,天冬氨酸(6.58±0.22)%为其次。光裸星虫的第一限制氨基酸和第二限制氨基酸分别是蛋氨酸和缬氨酸。4个群体的水分、粗蛋白、粗脂肪、灰分、氨基酸总量(TAA)、呈味氨基酸质量分数(DAA)等营养指标差异具统计学意义(P<0.05),必需氨基酸质量分数(EAA)、EAA/TAA、DAA/TAA、非必需氨基酸质量分数(NEAA)、EAA/NEAA等指标差异不具统计学意义(P>0.05)。光裸星虫是一种优质的高蛋白、低脂肪、味道鲜美、营养丰富的海产品。

摘  要:
In this study,the main nutrition components of four wild populations of Peanut WormSipunculus nudus from(Donghai Island,Beihai, Zhangzhou,Suixi) were tested and analyzed in order to find differences among four wild populations. The results showed that the average mass fraction of moisture of S. nudus from four wild populations was(79.39 ± 1.81)%;the average mass fraction of crude protein, crude fat and ash of S. nudus from them were(80.54 ± 3.11)%,(1.45 ± 0.27)% and(9.75 ± 2.14)%,respectively. Except Tryptophan and Cystine, 16 common amino acids were detected from S. nudus, which included 7 essential amino acids. And the average total mass fraction of amino acids was(63.91 ± 1.78)%;the average mass fraction of essential amino acids was(21.76 ± 0.63)%;the average mass fraction of delicious amino acids was(32.23 ± 0.64)%. There were four kinds of amino acids which are delicious amino acids among the highest mass fraction of five kinds of amino acids. And Glutamic was the highest mass fraction, which was(9.51 ± 0.26)%, Aspartic following, was(6.58 ± 0.22)%. The first limited amino acid and the second limited amino acid of S. nudus from four wild populations were Valine and methionine, respectively. There were statistically significant differences in moisture,crude protein,crude fat, ash, total amino acids(TAA)and flavor amino acid mass fraction(DAA) from four wild populations(P < 0.05). But there were not statistically significant differences in essential amino acids(EAA),EAA / TAA,DAA / TAA,non-essential amino acids(NEAA)and EAA / NEAA from four wild populations(P > 0.05)It was indicated that S. nudus is themarine food product of a high quality with good edible value and nutritive value.
