摘  要:
Studies on vegetable heat resistant at home and abroad were briefly reviewed. The morphological, physiological and biochemical foundation of heat resistant, heat shock proteins' mechanism of action and heat resistant genetic development were introduced. Some problems in this field which would be investigated further, were also pointed out and discussed.
