粤北山区不同养殖模式下麻鸡肉质的理化评价标准研究——以清远麻鸡为例

摘  要:
[目的]研究粤北山区不同养殖模式下麻鸡肉质的理化评价标准。[方法]以清远麻鸡为研究对象,对不同养殖模式下清远麻鸡的物理指标(肉色、嫩度、持水性)和化学成分指标(水分含量、蛋白质含量、脂肪含量、胶原含量)进行测定和分析。[结果]根据测定结果进行分级,得出了粤北山区麻鸡肉质的理化指标评级范围。[结论]该研究制定了粤北山区不同养殖模式下麻鸡肉质的理化评价标准。

摘  要:
[Objective]To study the physical and chemical evaluation standard of meat quality in different feeding modes in mountainous areas of Northern Guangdong.[Method]To determine and analyze the physical indexes(color, tenderness, hold water) and chemical indexes(moisture content, protein content, fat content, collagen content) of Qingyuan ma chicken in different feeding modes.[Result]According to the classification of the results, the rating range of physicochemical indexes for the quality of ma chicken meat in mountainous areas of Northern Guangdong was obtained.[Conclusion] The physical and chemical evaluation criteria for ma chicken meat quality under different feeding modes in mountainous areas of Northern Guangdong were established.
