源生态类野生中国大鲵肌肉氨基酸组成分析

摘  要:
采用凯氏定氮法检测大鲵(Andrias davidianus)肌肉的蛋白含量,利用氨基酸自动分析仪测定氨基酸含量,对源生态类野生大鲵肌肉进行营养价值评价。结果表明,大鲵肌肉粗蛋白质含量较高,为干物质含量的91.81%,总必需氨基酸占总氨基酸的44.40%,总必需氨基酸与总非必需氨基酸的比值为0.80;大鲵肌肉氨基酸分类组成中风味氨基酸含量为26.42%~33.45%,药用氨基酸含量达57.69%,支链氨基酸和抗氧化活性氨基酸的含量分别达15.60%和26.35%;大鲵肌肉的必需氨基酸比值系数分SRC为79,与甲鱼较为接近,优于羊肉、牛肉、猪肉,必需氨基酸指数EAAI为1.21,明显优于甲鱼、羊肉、牛肉和猪肉。大鲵肌肉蛋白含量高,氨基酸含量丰富,具有较高的药用和保健价值。

摘  要:
Determination and evaluation of nutritional value of protein and amino acid content of the source ecology of wild giant salamander(Andrias davidianus)muscle. The detection method of protein content determination of nitrogen by Kjeldahl,amino acid content was determined by amino acid analyzer. The results showed that the higher the content of crude protein in muscle of giant salamander, dry matter content was 91.81%, the total essential amino acid and total amino acid was44.40%, total essential amino acids accounted for the ratio of the total non essential amino acids was 0.80; flavor amino acid amino acid classification in 26.42% giant salamander muscle 33.45%, the content of medicinal amino acids was 57.69%, the content of branched chain amino acids and antioxidant the activity of amino acids were 15.60% and 26.35% respectively; the essential amino acids ratio of SRC were divided into 79 giant salamander muscle, and the turtle was close, is better than that of mutton, beef and pork, essential amino acid index EAAI was 1.21, significantly better than the turtle, mutton, beef and pork. Conclusion high giant salamander muscle protein content, amino acid content is rich, has high medicinal value and health care.
