陕北红枣中三萜类物质的抗氧化性分析

摘  要：
为了分析陕北红枣中三萜类物质的含量及抗氧化活性,本试验选取狗头枣和木枣为研究对象。以95%乙醇为提取溶剂,采用索氏提取法分别提取枣皮和果肉中的三萜类物质,体外试验法评价红枣中各类三萜提取液对DPPH·和双氧水的清除能力。研究表明,不同品种间总三萜含量差异较大,其中狗头枣枣皮三萜类物质的含量最高,为0.148 mg/g,木枣果肉总三萜含量最低,为0.136 mg/g。参试红枣品种中提取的三萜类物质在不同的抗氧化体系中都表现出较好的抗氧化活性,红枣三萜类物质含量与各抗氧化指标均呈显著正相关,为陕北红枣的开发利用提供了理论依据。

摘  要：
In order to analyze the triterpene substances content and antioxidant activity in the Northern Shaanxi jujube, this study selected the Goutouzao and Mu jujube as the research object. The triterpenoids of Chinese Dates from North of Shaanxi was extracted with Soxhlet extraction method on 95% ethanol extraction solvent. Two different methods was used to evaluate antioxidant activities including the capacity of DPPH·, and H2O2. The results showed that there was significant difference between the total triterpenoid contents from different varieties,the jujube peel of such jujube as the dog head having the most 0.148 mg/g, the jujube flesh of Mu jujube having the least 0.136 mg/g, two jujube cultivars had strong antioxidant capacities, two indexes of antioxidant capacities and total triterpenoid contents were significantly correlated. It provided a theoretical basis for the development and utilization of the Northern Shaanxi jujube.
