维生素B_2对5~16周龄五龙鹅屠宰性能、肌肉品质及脂肪代谢的影响

摘  要:
本试验旨在研究维生素B2对5~16周龄五龙鹅屠宰性能、肌肉品质及脂肪代谢的影响,以确定鹅饲粮中维生素B2的适宜添加水平。试验选用29日龄五龙鹅360只,随机分为6个组,每组6个重复,每个重复10只。Ⅰ组为对照组,饲喂基础饲粮(维生素B2含量为2.47 mg/kg),Ⅱ~Ⅵ组分别饲喂在基础饲粮中添加2.5、5.0、10.0、20.0、40.0 mg/kg维生素B2的试验饲粮。试验期12周。结果表明:1)Ⅲ组屠宰率、胸肌率、腿肌率均显著高于Ⅰ组(P<0.05),腹脂率显著低于Ⅰ组(P<0.05)。采用不相关比较法进行分析,饲粮维生素B2添加水平为5.73 mg/kg时屠宰率最大。2)Ⅲ组肌肉亮度(L*)值和红度(a*)值显著高于Ⅰ组(P<0.05),剪切力显著低于Ⅰ组(P<0.05)。3)Ⅲ组血清甘油三酯(TG)、总胆固醇(TCH)含量极显著低于Ⅰ组(P<0.01)。4)屠宰率与a*值和剪切力呈显著相关性(P<0.05);屠宰性能与TG、TCH含量呈显著或极显著相关性(P<0.05或P<0.01)。由此可见,饲粮添加5.0 mg/kg维生素B2对5~16周龄五龙鹅的屠宰率、胸肌率、腿肌率、腹脂率、L*值、a*值、剪切力及TG和TCH含量有显著影响,建议饲粮维生素B2适宜添加水平为5.73 mg/kg。

摘  要:
This experiment was conducted to study the effects of vitamin B 2 on slaughter performance,meat quality and fat metabolism of Wulong geese aged from 5 to 16 weeks,and to find the appropriate supplemental level of the vitamin B 2. A total of 360 Wulong geese( 29-day-old) were randomly divided into 6 groups with 6 replicates per group and 10 geese per replicate. Geese in the group Ⅰ( control group) were fed a basal diet, and geese in groups Ⅱ to Ⅵ( experimental groups) were fed the basal diet supplemented with 2. 5,5. 0, 10. 0,20. 0 and 40. 0 mg / kg vitamin B 2,respectively. The experiment lasted for 12 weeks. The results showed as follows: 1) the dressed percentage,percentage of breast muscle and percentage of leg muscle in group Ⅲ were significantly higher than those in group Ⅰ( P < 0. 05),but the percentage of abdominal fat was significantly lower than that in group Ⅰ( P < 0. 05). Using unrelated comparative analysis method,when the dietary vitamin B 2 level was 5. 73 mg / kg,the dressed percentage reached the highest. 2) The lightness( L*) and red( a*) values in group Ⅲ were significantly higher than those in group Ⅰ( P < 0. 05),but the shear force was significantly lower than that in group Ⅰ( P < 0. 05). 3) The contents of triglyceride and total cholesterol in group Ⅲ were significantly lower than those in group Ⅰ( P < 0. 01). 4) Dressed percentage had significant correlations with the a*value and shear force( P < 0. 05),respectively; the slaughter performance had significant correlations with the contents of triglycerides and total cholesterol( P < 0. 05 or P < 0. 01),respectively. In conclusion,adding 5. 0 mg / kg vitamin B 2 can significantly affect the dressed percentage,percentage of breast muscle,percentage of leg muscle,percentage of abdominal fat,L*value,a*value,shear force and contents of triglyceride and total cholesterol,the suggested dietary vitamin B 2 optimal supplemental level is 5. 73 mg / kg.
