摘 要:
[目的]探讨日照红茶品质成分与矿质元素及其溶出规律等特性。[方法]对日照红茶的品质成分、矿质元素含量及矿质元素的溶出规律进行了研究。[结果]试验表明,与其他品种红茶相比,日照红茶的茶多酚含量低,游离氨基酸含量丰富,TR/TF值为13.44,形成了日照红茶滋味鲜醇、苦涩味轻,汤色红亮的品质特征;矿质元素总量较高,3次浸泡溶出的元素总量丰富。因此,日照红茶具有品质佳、矿质元素含量丰富、滋味鲜醇、耐冲泡的特性。[结论]研究可为日照红茶质量控制及茶饮品的合理开发利用提供科学依据。

摘 要:
[Objective] To discuss quality components,mineral elements of Rizhao black tea,as well as dissolution characteristics.[Method]The quality components,mineral elements content and dissolution characteristics of Rizhao black tea were studied.[Result]The results showed that compare with other black tea,the polyphonol content of Rizhao black tea was low,content of amino acid was rich,the value of TR/TF was13.44,thus forming a Rizhao black tea taste light,liquor color is red and bright,total mineral elements was high,total mineral elements of three brewing were rich.Therefore,rizhao black tea has many characteristics such as good quality,abandon in mineral elements,fresh and mild taste and drew well.[Conclusion]The study can provide scientific basis for quality control of Rizhao black tea and reasonable development and utilization of tea beverage.
