大学生集体膳食食盐摄入量调查

摘  要:
目的:了解大学食堂菜肴含盐量,评价大学生食盐摄入量,为预防和改善大学生高盐摄入以及学校健康教育提供科学依据。方法:采用整群抽样方法,抽取大连工业大学2011级某自然班同学作为研究对象,用24h膳食回顾法连续调查其15d膳食,同时测定学校食堂各菜品的食盐含量。结果:被调查大学生人均从食堂获得食盐量为6.66±1.23g/d,高于《中国居民平衡膳食宝塔》中建议的每人6g/d,差异有统计学意义(P<0.05),南、北方学生食盐摄入量差异无统计学意义。结论:大学生食盐摄入量略高于中国居民膳食指南的推荐值,但大部分同学认为该咸度适中。建议学生食堂减少菜品的食盐使用量,从学生食盐摄入的主要来源上减少其食盐摄入量,将食盐摄入量降低到健康饮食水平。

摘  要:
Objective!!"To investigate and evaluate the salt intake of university students for prevention and improvement of the high salt intake of students,and to provide basic information for school health education. !!!!"Method!!"A 24h dietary recall was used for students from grade 2011 of Dalian Polytechnic University. Simultaneously,school canteen food salt content was determined. !!!!"Result!!"The average intake of dietary salt was 6. 66 ± 1. 23g / d,more than 6 g / d recommended by Chinese Residents Balance Diet Pagoda and the difference had statistical significance( P < 0. 05),the difference of salt intake between northern and south students had no statistical significance. !!!"Conclusion!!!"The salt intake of student was higher than the recommendation by Chinese Nutrition Society. It was suggested that canteen should decrease the additive amount of salt to limit the salt intake of students.
