油菜蜂花粉破壁前后的品质分析

摘  要:
对破壁前后油菜蜂花粉进行了花粉性状、营养成分及微生物状况分析。结果表明,未破壁的油菜蜂花粉颗粒呈椭球型颗粒状、黄色;破壁蜂花粉颗粒呈碎玻璃片状,浅黄色,细粉状。破壁后的花粉比破壁前的蜂花粉更甜,油腻感更强,且在口中更润滑。经过破壁后的蜂花粉中脂肪、可溶性糖、灰分和蛋白质含量均高于未破壁花粉,其中,脂肪增幅最大,为59.10%;灰分和蛋白质次之,分别为36.20%和30.83%;可溶性糖最低,为10.56%;而蜂花粉水分含量却下降了54.52%。破壁前后的蜂花粉完全符合蜂花粉的微生物标准,且细菌总数远小于国标要求。

摘  要:
This paper makes analysis on pollen characters, nutrient composition, microbial status before and after wall broken rape bee pollen. The result shows that rape bee pollen grains are not broken with ellipsoid type granular, yellow; bee pollen grains are broken glass flake, light yellow fine powder. Wall broken bee pollen are more sweet than before, greasy feeling stronger and more lubrication in the mouth. After wall broken bee pollen in fat, soluble sugar, the content of ash and protein are higher than that of pollen, which has the greatest increase in fat, is 59.10%; ash and protein times, are 36.20% and 30.83%, respectively; soluble sugar is the lowest, is 10.56%,bee pollen water content decreases 54.52%. Before and after wall broken bee pollen in full compliance with the microbiological criteria of bee pollen, and the total number of bacteria is far less than the national standard.
