鸡蛋生产质量安全问题分析及控制研究进展

摘  要:
鸡蛋是公认的营养食品,鸡蛋安全是全球消费者关注的焦点。文章基于我国蛋鸡养殖企业现状,对鸡蛋存在的质量安全问题及其影响因素进行了分析,并从环境、品种、饲料、饮水以及收集、贮存等方面提出具体的控制措施,以确保从源头上控制鸡蛋质量,提高鸡蛋安全水平。

摘  要:
Eggs are recognized as nutritional food,and safety issues is the focus of global consumer concern.According to the current situation of Chinese laying hens breeding enterprises,this article analyzed egg quality and safety issues and its influencing factors. Some specific control measures from the environment,breed,feed,water,and the collection and storage of eggs were suggested. These measures could control egg quality from the source to improve the level of egg safety.
