摘  要:
乳脂球膜(MFGM)是乳脂球的保护膜,是泌乳过程和泌乳后储藏过程中维持乳的乳化稳定状态的主要功能成分。MFGM类似细胞膜结构,主要由脂类和蛋白质构成。MFGM具有潜在的生物活性功能,包括抗炎、调节免疫、抗癌、抗菌和抗病毒等。本文综述了MFGM的形成与结构、化学组成和潜在生物活性功能的研究进展,并讨论了未来研究趋势,旨在为进一步研究与应用MFGM营养生理作用提供参考。

摘  要:
Milk fat globule membrane(MFGM)is a protective membrane of milk fat,which is the main functional composition in milk for maintaining stability of the oil-in-water emulsion phase both during secretion and storage. MFGM is similar to cell membrane structure,mainly has lipids and protein composition. It has been shown that MFGM has potential bioactivity effects,including anti-inflammatory,immunomodulatory,anticancer,antibacterial and anti-virus. This paper reviewed current understanding on the MFGM,their formation,structure,chemical composition and potential bioactivities,and discussed the existing problem and the future trends as well to provide a reference for further research and application of the nutritional physiology of MFGM.[Chinese Journal of Animal Nutrition,2020,32(3):973-982]
