烤烟调制过程中果糖含量变化规律初探

摘  要:
为明确烤烟调制过程中果糖含量的变化规律,采用不同的调制工艺对烤烟下部、中部和上部适熟烟叶进行调制,比较不同部位烟叶果糖含量的变化规律,并探索不同调制工艺对烟叶果糖含量变化的影响。结果表明,烟叶果糖含量在调制前较低,调制后升高;不同部位烟叶间果糖含量表现为上部叶>中部叶>下部叶;随着调制进程的推进,烟叶果糖含量逐渐增加,在调制36~84 h(即变黄后期—定色期)不同部位烟叶增幅不同,差异较大;在当地调制工艺的基础上,变黄期延长12 h有利于烟叶果糖含量的增加,定色期和干筋期延长12 h的影响较小;烤后烟叶果糖含量越高,其评吸质量表现越好,越利于卷烟原料需求。因此,建议适当延长变黄期调制时间,使烟叶中的果糖更进一步转化,以提高烟叶质量。

摘  要:
In order to explore the changing rule of fructose content during tobacco leaf curing process,we adopted different curing technologies to confect tobacco leaves at upper,middle and lower position,and then compare the changing rule of fructose content in different position,and study the effect of different curing technologies on fructose content. The results showed that the fructose content in tobacco leaf was lower before curing,and then rose after curing; the content in upper leaf was higher than middle leaf,and the content in middle leaf was higher than lower leaf. The content of fructose gradually increased with the curing process,and during 36 h to 84 h( the yellowing stage to color fixed stage),the fructose content in different position varied a lot; if we prolonged the yellowing stage for about 12 h,the fructose content would increase,while prolonging the color fixed period and stem drying stage had less influence on the fructose content. The higher the fructose content in tobacco leaf,the better the quality of the tobacco leaf in smoke panel test,thus better for cigarette formulation. Thus,we suggest prolonging the yellowing stage during curing process,to make the fructose inside the tobacco leaf transform completely,thus increasing the quality of tobacco leaf.
