杜洛克与陆川猪正反交后代背最长肌营养成分及氨基酸含量的比较

摘  要:
试验通过杜洛克猪与陆川猪的正反交试验分别获得杜陆猪和陆杜猪,并测定了体重为90 kg杜陆猪和陆杜猪背最长肌的常规营养成分及其氨基酸含量等指标。结果发现,每100 g猪肉中,陆杜猪中能量和干物质含量显著高于杜陆猪(P<0.05);杜陆猪中蛋白质和水分含量较高于陆杜猪,但两者之间差异不显著(P>0.05);杜陆猪和陆杜猪中灰分含量无显著差异(P>0.05);肌肉中17种氨基酸总量、必需氨基酸含量、鲜味氨基酸含量、必需氨基酸占氨基酸总量比例、鲜味氨基酸占氨基酸总量比例等指标,在杜陆猪和陆杜猪中比较均没有显著性差异(P>0.05)。结果表明,杜洛克猪与陆川猪正反交后代中,其肌肉中氨基酸含量差异不大,但杜陆猪肌肉中含有较高的蛋白质营养价值,这为杜洛克猪与陆川猪的杂交系选育提供了依据。

摘  要:
By means of reciprocal cross with Duroc and Luchuan pigs, Du-Lu pig and Lu-Du pig were acquired in this study, respectively. And nutritional components and amino acid were detected in the longissimus muscle of Du-Lu and LuDu pigs with a weight of 90 kg. The results showed that the energy and dry matter contents per 100 g meat were higher in Lu-Du pig than in Du-Lu pig(P<0.05).There was no significantly difference for protein and moisture contents between DuLu pig and Lu-Du pig(P>0.05),but the protein and moisture contents were higher in Du-Lu pig than in Lu-Du pig. The ash content had no significantly difference between Du-Lu pig and Lu-Du pig(P>0.05).Besides there was also no significantly difference for the contents of total amino acids(TAA),essential amino acid(EAA),delicious amino acid(DAA), and the percentages of EAA/TAA, DAA/TAA between Du-Lu pig and Lu-Du pig(P>0.05).These results indicate that there was no influence for amino acid contents in the offspring from reciprocal cross with Duroc and Luchuan pigs, but the nutritive value of protein was higher in Du-Lu pig, which provides a basis for the breeding of hybrid system.
