低值鱼酶解蛋白的制取及其组成研究

摘  要:
研究了复合生物酶酶量、酶解时间、酶解温度等对低值鱼蛋白酶解效果的影响 ,研究结果表明 ,酶浓度提高 ,水解时间延长 ,均明显提高低值蛋白水解率。复合生物酶最适水解温度为 5 0℃ ,温度高于 5 0℃ ,水解率逐渐下降 ,苦味值随水解率提高而增加。综合考虑 ,该复合生物酶水解低值鱼的最佳条件为 :酶量与底物之比 :1 5∶10 0 0 ;温度 :5 0℃ ;水解时间 :4h。复合酶水解低值鱼蛋白经氨基酸分析仪检测 ,其氨基酸含量为 73% ,经高效液相色谱分析 ,其分子量组成范围在 740 0以下 ,其中 30 0 0以下占 90 %以上 ,10 0 0以下的占 5 4%。

摘  要:
This paper deals with the effects of enzyme concentration,hydrolysis temperature,and hydrolysis duration of a certain complex enzyme on the hydrolysis proportion of low grade fish protein.The results are as follows:Increasing enzyme concentration and hydrolysis duration,the hydrolysis proportion raises significantly.The optimum hydrolysis temperature of this certain complex enzyme is 50 ℃.When temperature is above 50 ℃,the hydrolysis proportion decreases.The bitter of the hydrolysis protein increases as the hydrolysis proportion improves.In a word,the suitable hydrolysis conditions of this ceriain complex enzyme are given in enzyme concentration of 1.5:1 000,hydrolysis duration of 4h,hydrolysis temperature of 50 ℃.By anlysising,in the hydrolysis protein,amino acids takes up 73%;the protein molecule weight range is under 7 300,90% is under 3000,the small molecular that molecule weight under 1 000 takes up 54%.
