黑加仑色素的稳定性研究

摘  要:
研究了黑加仑色素的光稳定性、热稳定性、耐氧化还原性、不同的金属离子及介质pH值对吸光度的影响等理化性质。结果表明该色素,对光、热等较为稳定,对氧化还原剂稳定,可以在pH2~10的介质中使用,性质优良,食用安全。

摘  要:
In the study of black current pigment, the optical stability, thermal stability, oxidation-reduc tion resistibility, the effect of different metal irons and the pH to absorbance were involved. The results expressed that the pigment was relatively stable to the suitable above-mentioned agents. The pigment was edible and its properties were superior.
