3种不同生物保鲜剂对鸡蛋的保鲜效果

摘  要:
旨在研究对鸡蛋保鲜有效的生物保鲜剂,采用壳聚糖、蜂胶和金银花3种不同保鲜液作为保鲜剂进行试验。在25℃、相对湿度70%的贮藏条件下,对鸡蛋各项感官指标和理化指标进行测定。结果表明,壳聚糖、蜂胶和金银花保鲜液涂抹贮藏28d后鸡蛋质量损失率分别为5.42%、7.29%、6.55%,蛋黄指数分别为0.327、0.236、0.248,哈夫单位为49、45、46,气室高度为4.1、6.7、5.2mm。经比较,壳聚糖提取液效果最佳,贮藏28d后好蛋率为100%,且壳聚糖保鲜剂来源丰富,价格低廉,为天然无毒副作用的生物保鲜剂。

摘  要:
To develop biological fresh-keeping agents,the fresh-keeping effects of preservative solutions made of chitosan,honeysuckle,propoli on eggs were investigated.After soaked in a solution for one minute,eggs were dried,sealed and then stored in bags at 25 ℃,with relative humidity 70%.The quality of the eggs was periodically evaluated by visual evaluation and physicochemical tests during their storage.After 28 days of storage,chitosan,honeysuckle and propoli had respectively mass losing rate of 5.42%,7.29% and 6.55%,yolk index 0.327,0.236 and 0.248,Haugh 49,45 and 46,and chamber diameter 4.1 mm,6.7 mm and 5.2 mm.The result shows that Chitosan has the best fresh-keeping effect on eggs.Chitosan preservative belongs to the biological fresh-keeping agents of the abundant source,low price,and natural non-toxic side effects.
