菠萝皮可溶性膳食纤维碱法提取工艺的优化

摘  要:
以菠萝(Ananas comosus L.)皮为原料,采用碱法提取可溶性膳食纤维。通过设计单因素试验分别考察了料液比、浸提温度、浸提液pH、浸提时间4个因素对菠萝皮可溶性膳食纤维提取率的影响,并在此基础上,采用正交试验优化菠萝皮可溶性膳食纤维的提取工艺。结果表明,菠萝皮可溶性膳食纤维的优化工艺为料液比1∶20(m/V,g∶mL)、浸提温度80℃、浸提液pH 12、浸提时间90 min,在此条件下,菠萝皮可溶性膳食纤维的提取率可达23.58%,所得膳食纤维的持水力和溶胀性分别为11.59 g/g和14.7 mL/g。

摘  要:
The soluble dietary fiber was extracted from pineapple peel by alkaline hydrolysis. The effects of liquid-solid ratio, extraction temperature,pH and extraction time on the extraction yield of soluble dietary fiber were investigated. The optimal extraction condition of soluble dietary fiber was studied by the orthogonal test. The optimal extraction conditions were liquidsolid ratio 1∶20, extraction temperature 80 ℃, pH 12, extraction time 90 min. Under these conditions, the extraction yield of soluble dietary fiber reached 23.58%. The water holding capacity and swelling capacity of soluble dietary fiber were 11.59 g / g and 14.70 mL / g, respectively.
