粮食观念的变迁——从《齐民要术》到《华北的农村》

摘 要:
对比《齐民要术》与《华北的农村》所列举的食物之差异,发现前者较倾向贵族饮食观,而后者更倾向于平民。在比较中国贵族与庶民饮食传统后,认为两本书的差异源于时代因素。第一,20世纪上半叶,由于西方科学的传入,中国科学家开始以现代营养科学概念来思考中国人的饮食习惯。从营养的角度来看,传统意义上的珍馐佳肴并不比普通大众饮食更具有养生价值。第二,当时中国日益严重的粮食危机促使一些科学家从地理学、生态学的角度出发,认为以植物为主的饮食结构更为合理。

摘 要:
Research found that,in terms of recipe,Rural Areas of North China takes more attention to ordinary people while the ancient agricultural book such as Qi Min Yao Shu mainly consider the upper class.By comparing the food traditions of poor people and rich people in Chinese history,it can be concluded that the differences between the two books resulted from the causes of the era.In the first part of the twentieth century,with the introduction of western science,Chinese scientists began to reflect on our old cuisine habit.However,considering the nutritive value,Chinese traditional delicacies is not better than common food.In addition,the growing crisis in food caused some scientists set higher value on plant food than animal plant by the reasons of ecology and geography.
