鸡体表组织中加丽素红残留与着色剂添加关系研究

摘  要:
加丽素红是禽类产品着色过程中主要的合成色素之一。为满足消费者对于禽类产品色泽度要求,加丽素红被广泛添加到禽类饲料中使家禽的蛋黄、皮肤、羽毛等增色。对海兰蛋鸡采食含有加丽素红的饲料后体表组织色泽变化及其残留量研究,探讨鸡脚胫和眼睑皮肤色泽变化与残留量的关系。将108只19周龄海兰蛋鸡随机分为对照组(不含加丽素红的基础饲料)、低剂量组(添加0.08 g/kg加丽素红)和高剂量组(添加8 g/kg加丽素红),前30d分别饲喂基础饲料和添加加丽素红的实验饲料,后30 d全部饲喂基础饲料,试验每隔10 d,用罗氏比色扇测定鸡脚胫罗氏比色扇值(RYCF值),并测定鸡脚胫及眼睑皮肤中加丽素红的残留量。结果表明,鸡脚胫颜色随饲喂天数和剂量的增加,低剂量组RYCF值升高3级,高剂量组RYCF值升高5级;停喂实验饲料后,低、高剂量组RYCF值均降低1级,组织中加丽素红残留量也随之降低。饲喂加丽素红可明显改善鸡体表组织色泽,并且鸡体体内加丽素红残留量多少影响体表组织色泽度大小。

摘  要:
We explored the relationship between the color change and the residual amount in chicken shank and eyelid skin after Hylion laying hens had foraged with carophyll red. One hundred and eight Hylion laying hens at 19 weeks of age were randomly divided into control group( basal forage without carophyll red),low dose group(0. 08 g / kg carophyll red additives) and high dose group(8 g / kg carophyll red additives). They were fed on the basal forage and experimental forage with different dosecarophyll red for the first 30 days,then changed to basal forage for the next 30 days. In each 10 d,the RYCF value was measured by Roche colorimetric fan and the residual carophyll red in chicken shank and eyelid skin was also tested. The results indicated that color of chicken shank and RYCF value enhanced with feeding date and dose increasing. After stopping experiment forage,the residual carophyll red was also reduced. The chicken surface tissues color would be obviously improved after feeding with carophyll red,and it was positively correlated with the residual carophyll red.
