日粮中十溴联苯醚含量对肉鸡血液指标、屠体性状和肉品质的影响

摘  要:
为研究持久性有机污染物十溴联苯醚(BDE-209)对肉鸡血液指标、屠宰性能及肉品质的影响,在肉鸡日粮中添加0、0.004、0.08、2和20 mg/kg BDE-209,每个处理12只鸡,连续饲喂42 d后测定血液指标、屠体性状及肉品质。结果显示:日粮中添加0.004、0.08和2 mg/kg BDE-209极显著降低了肉鸡血液中白细胞、中性粒细胞、淋巴细胞等免疫细胞数量(P<0.01),BDE-209呈剂量依赖性地降低了血小板数量和血小板压积(P<0.05);BDE-209降低肉鸡腿肌率(P<0.01),不同程度地增加了腹脂率(P<0.01);0.08~20 mg/kg BDE-209增加了肌肉滴水损失(P<0.05),降低了a*值(P<0.05),2和20 mg/kg BDE-209组降低胸肌pH45min值(P<0.05);此外,BDE-209极显著降低胸肌中SOD活性(P<0.01),并增加了丙二醛水平(P<0.05)。综合以上表明,BDE-209不仅降低肉鸡的免疫机能和屠体性状,还加剧了鸡肉脂质过氧化反应,降低肉品质。

摘  要:
To investigate the effects of dietary decabrominated diphenyl ether(BDE-209, one of persistent organic pollutants) on blood parameters, carcass traits and meat quality in broilers. Broilers were fed with the diets supplemented with 0, 0.004, 0.08, 2, 20 mg/kg BDE-209 for forty-two days, with 12 birds per group. Blood parameters, carcass traits and meat quality of broilers were determined. The results showed that 0.004, 0.08 and 2 mg/kg BDE-209 significantly decreased the numbers of white blood cells, neutrophilic granulocytes and lymphocytes(P<0.01). Dietary supplemention of BDE-209 dose-dependently decreased the number of platelets and plateletcrit(P<0.05). BDE-209 decreased the rate of thigh muscle(P<0.01), significantly increased the percentage of abdominal fat in broilers(P<0.01). Dietary supplemention of 0.08 to 20 mg/kg BDE-209 increased drip loss and reduced a*value(P<0.05), 2 and 20 mg/kg BDE-209 decreased pH45 minvalue of muscle(P<0.05). Furthermore, BDE-209 significantly decreased the activity of superoxide dismutase(SOD)(P<0.01) and elevated the levels of malondialdehyde in broiler breast muscles(P<0.05). It′s suggested that dietary supplemention of BDE-209 not only aggravated immune function and carcass performance, but also accelerated lipid peroxidation and decreased meat quality in broilers.
