牦牛种间杂交后代乳脂肪酸含量比较

摘  要:
分析了西门塔尔×藏黄牛×牦牛、荷斯坦奶牛×藏黄牛×牦牛、荷斯坦牛×牦牛、娟姗×牦牛四种杂种牛乳脂肪酸组成特点。样品提取脂肪后进行甲酯化,用气相色谱-质谱联用(GC-MS)法测定脂肪酸组成。结果表明:四个品种之间,除十一酸、月桂酸等8种脂肪酸外的其它18种脂肪酸在品种间均有差异(p<0.05);不饱和脂肪酸的含量差别较大,从42.20%~50.22%不等,西门塔尔×藏黄牛×牦牛不饱和脂肪酸的含量(50.22%)显著高于娟姗×牦牛(42.20%),多不饱和脂肪酸在品种间差异显著,荷斯坦牛×牦牛含量最高,为30.53%,MUFA/PUFA为0.61:1。可见,荷斯坦牛×牦牛乳脂肪酸营养价值高,这对乳品开发和牦牛品种改良具有重要意义。

摘  要:
Fatty acids compositions in milk of four kinds of crossbred yaks,such as Simmental × Tibetan cattle × yak,Holstein cows × Tibetan cattle × yak,Holstein cows ×yak,Juanshan cattle × yak were analyzed. After being extracted from milk samples,methyl esterification of fatty acids was carried out,and then their compositions were analyzed using GC-MS. Results demonstrated that 18 varieties fatty acids show significant difference with different yak varieties except hendecanoic acid lauric acid(p<0.05). There is great difference among contents of unsaturated fatty acids in milk of different varieties yaks,ranging from 42.20% to 50.22%. The content of unsaturated fatty acid in milk of Simmental × Tibetan cattle × yak(50.22%) is obviously higher than that of unsaturated fatty acid in milk of Juanshan cattle × yak(42.20%). Significant difference among contents of polyunsaturated fatty acids exists with different yak varieties,and the highest is in milk of Holstein cows ×yak(30.53%) with ratio of MUFA/PUFA 0.61:1. The results indicated that milk of Holstein cows × yak has high nutritional value,which has the important meaning to dairy products development of yak and breeding of cattle.
