诱导提高茶树EGCG含量过程对鲜叶品质生化成分的影响

摘  要:
以福鼎大白茶、铁观音品种为材料,系统研究了诱导提高茶树表没食子儿茶素没食子酸酯(EGCG)含量过程对鲜叶主要品质生化成分的影响.结果表明:诱导显著提高了茶树鲜叶茶多酚、可溶性糖含量,降低粗纤维含量,而对咖啡碱、氨基酸、叶绿素等生化成分含量影响不大.

摘  要:
Taking Fu Ding Da Bai Cha and Tie Guan Yin cultivars as materials, during the process of inducing the increment of epigallocatechin gallate (EGCG), the contents of polyphenols and soluble sugar were significantly increased, and the content of rough fiber decreased, but the biochemical components such as caffeine, amino acids and chlorophyll were not obviously affected.
