摘  要:
为了优化胃蛋白酶酶解瘤背石磺肌肉工艺参数,以温度、p H、时间和液固比为试验因子,以水解度为响应值,在单因素试验的基础上,根据Box-Behnken中心组合设计试验原理,采用4因素3水平的响应面试验设计确定最佳工艺条件。结果表明,最佳酶解工艺参数为温度35℃,p H 1.5,时间2 h,液固比93 m L·g-1。经过验证,实际水解度为11.38%,与理论值的RSD为0.26%。

摘  要:
To optimize the enzymolysis conditions of Onchidium struma mantle protein using pepsin, the effects of enzymolysis temperature, p H value, enzymolysis time and liquid-solid ratio on the hydrolysis rate were determined using the response surface methodology(RSM). The enzymolysis conditions were investigated based on a 4-variable, 3-level Box-Behnken central composite design on the basis of single factor. Results showed that the optimum technological conditions were: enzymolysis for 2 h at 35℃ and p H1.5 with the liquid-solid rate of 93 m L·g-1. The actual hydrolysis rate was 11.38%, which was 0.26% of the theoretical value of RSD.
