摘 要:
为了比较西门塔尔牛和威宁黄牛的杂交效果,笔者进行了西威牛F1代和威宁黄牛的短期育肥研究。结果表明,西威牛和威宁黄牛平均日增重、屠宰率、净肉率、眼肌面积分别为1.159 kg、53.62%、45.11%、85.35 cm2和0.829 kg、48.73%、39.85%、54.65 cm2,西威牛均极显著高于威宁黄牛(P<0.01);胴体脂肪覆盖率分别为81.96%和68.96%,西威牛优于威宁黄牛(P<0.05);而西威牛肉蛋白质含量19.60%,极显著低于威宁黄牛的22.65%(P<0.01),脂肪含量25.30%显著高于威宁黄牛的7.95%(P<0.05);总氨基酸含量、必需氨基酸含量分别为85.93mg/100mg、39.17mg/100mg和82.96mg/100 mg、36.58 mg/100 mg,西威牛亦极显著(P<0.01)和显著(P<0.05)高于威宁黄牛。

摘 要:
In order to compare Weining cattle and Simmental cattle hybridization effects were short-term studies Xi-wei cattle fattening of F1 and Weining cattle. The results showed that: Xi-wei Weining cattle and cattle average daily gain, dressing percentage, meat percentage, loin eye area were 1.159 kg, 53.62%, 45.11%, 85.35 cm2 and 0.829 kg, 48.73%, 39.85%, 54.65 cm2,Xi-wei cattle were significantly higher than that of Weining cattle(P <0.01), carcass fat coverage was 81.96% and 68.96%,better than Xi-wei Weining cattle cattle(P <0.05); while the protein content of beef Xi-wei 19.60%, significantly lower than the 22.65% Weining cattle(P <0.01), the fat content of 25.30% was significantly higher than 7.95% Weining cattle(P <0.05),total amino acids, essential amino acids were 85.93 mg/100 mg, 39.17 mg/100 mg and 82.96 mg/100 mg, 36.58 mg/100 mg, Xi-wei cattle also were significantly(P <0.01) and significantly(P <0.05) higher than that of Weining cattle.
