摘  要:
本文从农药残留检测原理的角度,对国内外农药残留的快速检测技术的研究现状进行了评述。包括目前在实验室用于食品农药残留的快速检测技术:薄层色谱法、色-质联用技术、极谱分析、超临界技术等;具有更广泛应用前景的现场快速检测技术:免疫分析、生物传感器、酶抑制技术等。

摘  要:
The rapid detection of pesticide residues in food and its development were reviewed in this paper. Thin layer chromatography, gas chromatography mass, liquid chromatography mass, polargraphic analysis, supercritical fluid extraction and supercritical fluid chromatography were developed quickly and applied widely in laboratory. The potentiality in the use of biosensor, immunoassay and enzyme inhibition were great in the rapid detection on the spot.
