根霉紫外诱变菌株的性能及其发酵制作腊八豆的研究

摘  要:
以品质优良的高温根霉菌株8为出发菌株,经紫外线诱变,获得一生长性能良好、具有广温特性的菌株1。试验测定了菌株的淀粉酶活性、温度适应性、好氧性能和遗传稳定性,并用其发酵制作腊八豆,测定了腊八豆的氨基酸含量。结果表明:诱变株不仅适应38℃的高温条件,而且在18℃以上的中温条件也能以相同的速度发酵、生长、成熟。同时,诱变菌株的蛋白酶活性有显著提高,淀粉酶等多糖酶活性也并未减少,经多代培养其性状稳定遗传。

摘  要:
A strain of coloury heat Rhizopus.sp 8 was induced by UV to obtain a strain of rhizopus 1 with characters of rapid growth and wide temperature.The experiment determined amylase activity,temperature adaptability,aerobic capability and genetic stability of rhizopus 1,and determined the amino acid content in Laba beans which were produced by fermentation of rhizopus 1.The results showed that the rhizopus 1 not only adapted to a heat condition(38℃),but also can ferment,grow and mature by the same speed at the mid-temperature condition(over 18℃).Meanwhile,the protease activity of rhizopus 1 increased significantly,and the polyase activity(amylase activity) did not reduce.The characters of rhizopus 1 were stably inherited after multi-generations cultivation.
