凉山黄牛肉质检测初报

摘  要:
[目的]研究旨在了解凉山黄牛肉质品,[方法]采用国家标准测定方法对凉山黄牛的肉品质成分进行检测分析。[结果]:凉山黄牛肉质水分、粗灰分、粗蛋白、粗脂肪、氨基酸总量、钙、铜、铁和磷含量分别为70.72%、1.22%、20.96(g/100g)、6.7%、19.58%、54.44(mg/kg)、1.15(mg/kg)、18.6(mg/kg)和0.2%。由此可知,凉山黄牛肉品质较好。

摘  要:
This study was aimed to know the meat quality of Liangshan cattle.According to the national standard measurement method,herein,the nutrient components of meat quality of Liangshan cattle were determined and analyzed.The result showed that the contents of moisture,crude ash,crude protein,crude fat,total amino acids,calcium,copper,iron and phosphorus of Liangshan yellow cattle were 70.72%,1.22%,20.96(g/100 g),6.7%,19.58%,54.44(mg/kg),1.15(mg/kg),18.6(mg/kg)and 0.2%,respectively.It can be seen that the quality of Liangshan yellow beef is good.
