新西兰翻转式羊屠宰加工工艺及其特点

摘  要:
作为世界上羊肉最主要的出口国之一的新西兰在羊屠宰加工技术方面也处于国际领先的地位。在新西兰创立的翻转式羊屠宰加工工艺,经过30多年的不断发展和完善,已成为目前许多发达国家采用的主要加工工艺。文章通过与我国目前仍然广泛采用的传统的羊屠宰加工工艺的比较,详细地介绍了新西兰翻转式羊屠宰加工工艺的操作步骤、系统设备布置和主要特点,并对我国羊屠宰加工技术的发展提出了若干值得思考的问题和建议。

摘  要:
New Zealand,one of the most important coun- tries in exporting lamb meat,is at lead position in sheep slaughtering and processing technology in the world.The inverted dressing system of lamb and sheep,which invented by MIRIZN in 1970s’, has been improved and completed through nearly 30 years,and has become a main sheep processing system in a lot of advanced countries now.In comparison with the conventional sheep processing system,procedures of the inverted dressing system, layout of the system and its main advantages are described detail in this paper.Finally some consid- erable issues and valuable suggestions are presented for developing sheep meat industry in the further in China.
