双酶法提取黑豆红色素新工艺

摘  要:
以黑豆皮为原料、黑豆红色素提取率为指标,在单因素试验的基础上,通过正交试验确定双酶法提取黑豆红色素的最佳工艺为酶用量(果胶酶+纤维素酶)(2+1)mg、酶解p H值3.6、酶解温度55℃、料液比1∶25、酶解时间120 min、提取2次,提取率高达26.60%。研究结果显示,采用双酶法提取黑豆红色素简单高效、提取条件温和且无溶剂残留问题,适用于食品工业规模化生产。

摘  要:
Taking black soybean skin as the ma terial, and black soybean red pigment extraction rate as index, on the basis of single factor experiment, through orthogonal test the double enzymatic extraction technology was determined. It was as follow enzyme dosage of black soybean red pigment(pectinase and cellulase) 2 mg +1 mg, enzyme solution p H 3.6, enzyme solution temperature of 55 ℃,material liquid ratio 1 ∶25, 120 min digestion time, extracting 2 times, extraction rate as high as 26.60%.The results showed that the double enzymatic extraction of black soybean red pigment is simple and efficient, has mild extraction conditions and no solvent residue problem, and is suitable to food industry large-scale production.
