浙西南引种鲜食枣果实性状综合评价

摘  要:
以沾化冬枣、苹果冬枣、芒果冬枣、特早4号、伏脆蜜、月光、鸡蛋枣、金脆蜜、大金丝王枣、长细、梨枣、早脆王和胎里红13个鲜食枣品种为试材,对其单果重、果实整齐度、果实硬度、可食率、可溶性固形物、可滴定酸、可溶性糖、Vc、糖酸比、果实口感10项果实品质性状进行测定分析和综合评价。结果表明:13个鲜食枣品种间可食率和可溶性糖差别较小,而单果重、果实整齐度、果实硬度、可滴定酸和糖酸比差异相对较大;采用隶属函数法转化后的数据经因子分析,提取出果实风味营养因子、果实Vc及贮藏因子、果实口感因子3个特征根大于1的公因子,其累计方差贡献率为80.01%,可以反映鲜食枣果实品质的绝大部分信息;13个鲜食枣品种果实品质综合评价由高到低排序结果为:金脆蜜>伏脆蜜>月光>沾化冬枣>长细>大金丝王枣>苹果冬枣>早脆王>特早四号>鸡蛋枣>芒果冬枣>梨枣>胎里红,这一结果与感官评价的结果基本一致。

摘  要:
Determinations were conducted on fruit traits, such as single fruit weight, uniformity, firmness, etc of 13 fresh Chinese jujube cultivars introduced in Lishui, Zhejiang province. The results showed that it had small differences of edible rate and soluble sugar content among tested jujube cultivars, but had larger differences of single fruit weight, uniformity, firmness, titratable acid, sugar acid ratio. Factor analysis on determined data resulted 3 common factors(eigenvalue>1), with their cumulative contribution ratio of 80.01%. Comprehensive evaluation on fruit quality of tested jujube cultivars was similar with sensory evaluation..
