蚯蚓养殖鲟鱼的含肉率及肌肉营养成分分析

摘  要:
为探索蚯蚓作为动物性蛋白饲料养殖鲟鱼对其产品品质的影响,对蚯蚓养殖鲟鱼的含肉率及肌肉营养成分进行了测定。结果:蚯蚓养殖条件下鲟鱼含肉率为64.96%;肌肉中蛋白质、脂肪、灰分含量分别为17.78%、8.67%、1.92%;肌肉中18种常见氨基酸总含量(占肌肉干重)为81.67%。其中必需氨基酸含量为48.16%,占氨基酸总量的58.96%。必需氨基酸与非必需氨基酸含量的比值为1.43。呈味氨基酸含量为23.83%,占氨基酸总量的34.65%。必需氨基酸指数(WHO/FAO标准为参照)为78.94%,亮氨酸为第一限制性氨基酸,色氨酸为第二限制性氨基酸。

摘  要:
This study was conducted to assess the use of alternative animal protein resource in diets for Sturgeon. The flesh content and body composition of Sturgeon fed by the diets contain different levels of earthworm meal as protein resource were measured. The results showed that the flesh content of Sturgeon fed was 64.96%,and the contents of protein,lipid and ash in muscle were 17.78%,8.67% and 1.92%,respectively. The 18 common amino acids in muscle accounted for 81. 67%( dry matter) of the total amino acids. The content of essential amino acids was 48. 16%,which accounted for58.96% of the total amino acids. The ratio of the essential amino acid content to the non-essential amino acid content was 1.43. The content of delicious amino acid was 23.83%,accounting for 34.65% of the total amino acid. The essential amino acid index( reference by WHO/FAO standard) was 78.94%.Bright amino acid is the first limiting amino acid and tryptophan is the second limiting amino acid.
