山羊肉质相关主效基因研究进展

摘  要:
影响山羊肉质的指标很多,其中肌内脂肪(IMF)、肌肉嫩度、肌苷酸(IMP)是业界公认的部分主要指标。本文对IMF、肌肉嫩度、 IMP的相关主效基因脂肪型脂肪酸结合蛋白(A-FABP)、心脏型脂肪酸结合蛋白(H-FABP)、腺苷酸琥珀酸裂解酶(ADSL)、钙蛋白酶1(CAPN1)及钙蛋白酶抑制蛋白(CAST)基因近年来的研究进展情况进行综述,以期为开展山羊肉质相关主效基因的研究及肉用性状选育提供一定的理论参考。

摘  要:
There are many factors that affect goat meat quality,among of them,intramuscular fat(IMF),muscle tenderness,inosine monphosphate(IMP)are some key indicators recognized by the industry. This article focused on review the research progress in recent years of related major genes of heart fat acid binding protein(H-FABP),heart fat acid binding protein(H-FABP),adenylosuccinate lyase(ADSL),calpain 1(CAPN1)and calpastatin(CAST)genes for IMF,muscle tenderness and IMP. It aimed to provide some reference to study the related major genes on meat quality of goats,and also to research of breeding of meat traits of goats.
