威宁鸡肌肉品质指标测定

摘  要:
为了解威宁鸡的肌肉品质,为其种质开发、选育及相关研究提供参考,选取60只(公鸡34只,母鸡26只)180日龄、相同管理条件及健康无病的威宁鸡,采集胸肌进行常规肉质、化学组分、脂肪酸组成及氨基酸测定。结果表明:威宁鸡胸肌肌肉嫩度、失水率分别为2.089kg/cm2和18.352%,粗脂肪、粗蛋白含量分别为1.278%和23.153%,不饱和脂肪酸含量为63.437%,必需脂肪酸含量为28.994%;总氨基酸含量为67.537g/100g,其中鲜味氨基酸含量为20.794g/100g,必需氨基酸含量为31.036g/100g,非必需氨基酸含量为15.707g/100g,芳香族氨基酸含量为6.546g/100g。威宁鸡肌肉嫩度和保水性能良好,肌肉组成具有低脂肪高蛋白特点,脂肪酸和氨基酸组成优异,不饱和脂肪酸、必需脂肪酸、风味氨基酸及必须氨基酸含量高,兼具良好的肉质风味和营养价值。

摘  要:
In order to understand the meat quality of Weining chicken,and provide reference for its development,selection and other related research.The same management condition and 60 healthy Weining chickens(♂ ∶34,♀ ∶26)were selected to detect meat quality,chemical composition,fat acid composition and amino acid determination at 180-day-old.Results:Tenderness,water loss rate,crude fat,crude protein content,unsaturated fatty acid content,essential fatty acids content,and total amino acid content of breast muscle in Weining chicken were 2.089kg/cm2,18.352%,1.278%,23.153%,63.437%,28.994%,and 67.537g/100 g respectively.Furthermore,the flavor amino acids,essential amino acid,non essential amino acid and aromatic amino acid among total amino acid content were 20.794g/100 g,31.036g/100 g,15.707g/100 g and 6.546g/100 g,respectively.The above results showed that Weining chicken has good tenderness,excellent water retention properties,low fat high protein,reasonable fatty acid and amino acid composition,abundant unsaturated fatty acid,essential fatty acid,flavor amino acid and essential amino acid,and further suggested Weining chicken has good meat flavorand nutritional value.
